How Seitan is made
Seitan was developed by buddhist monks centuries ago.
In modern food production, processes are of course highly automated
and have a much larger scale than in the monastery –
but the basic steps have not changed.

… and kneaded.
The kneading separates the starch from the flour.
This process is repeated…
… until almost exclusively wheat protein is left.
Cooked with herbs, spices, and other ingredients…
… we get Seitan.
