A special Russian holiday dish. The salad was created in the 1860s in the Russian Empire by the French cook Lucien Olivier. One of the most famous specialities of his restaurants was a salad and its sauce was especially loved by gourmet experts in Moscow. In the Soviet Republic the dish widely known as Oliviersalad became a traditional special holiday dish. Until today, Oliviersalad is known to be one of the most loved salads in Russia.

Boil the carrots together with the potatoes (without peeling them). Let them cool off and then peel them. Evenly cut the potatoes, carrots, pickled gherkins, sausages and the unpeeled cucumber into small cubes (approx. 6 mm). Thoroughly mix the cubes with the vegan mayonnaise, chopped up chives and the coarsely chopped parsley in a bowl. Season with salt and pepper.
